Analisis Pola Konsumsi Pangan Rumah Tangga Petani Ubi Kayu (Manihot utilissima) di Kabupaten Wonogiri

Abstract : Food consumption patterns provide an overview of people's eating habits and commodities that are most often consumed. This study aims to analyze food consumption patterns from the aspects of quantity and quality and see the factors that influence the food consumption patterns of cassava farming households in Wonogiri Regency. The basic research method is descriptive quantitative. The method of determining the location in the study was purposive sampling method, namely in Wonogiri Regency. The data sample used amounted to 70 respondents with accidental sampling method. The data analysis method used was TKE and TKP analysis, one sample t-test, PPH analysis and multiple linear regression analysis. The results showed that the energy and protein consumption of cassava farming households in Wonogiri Regency were 1,660.13 kcal/capita/day and 55.48 grams/capita/day, respectively. The level of energy and protein consumption is known to be 78.67% and 89.37%, respectively, which are included in the less and medium categories. The PPH score of cassava farming households scored 74.7 in the deficient category. The food groups of grains and beans exceeded the PPH recommended value, while other food groups were still below the PPH recommended value. The results of the analysis of factors affecting household food consumption patterns partially independent variables of the number of family members and the age of the head of the family have a significant effect on the energy consumption of households of cassava farmers, while the variables of household income, education of housewives, and land area have no significant effect on the energy consumption of households of cassava farmers. The results of the F test explain that together the independent variables affect the household energy consumption of cassava farmers.

Abstrak : Pola konsumsi pangan memberi gambaran kebiasaan makan masyarakat dan komoditas yang paling sering dikonsumsi. Penelitian ini bertujuan untuk menganalisis pola konsumsi pangan dari aspek kuantitas dan kualitas serta melihat faktor – faktor yang mempengaruhi pola konsumsi pangan rumah tangga petani ubi kayu di Kabupaten Wonogiri. Metode dasar penelitian adalah deskriptif kuantitatif. Metode penentuan lokasi dalam penelitian adalah metode purposive sampling yaitu di Kabupaten Wonogiri. Sampel data yang digunakan berjumlah 70 responden dengan metode accidental sampling. Metode analisis data yang digunakan adalah analisis TKE dan TKP, uji one sample t-test, analisis PPH dan analisis regresi linier berganda. Hasil penelitian menunjukkan konsumsi energi dan protein rumah tangga petani ubi kayu di Kabupaten Wonogiri secara berurutan yaitu 1.660,13 kkal/kapita/hari dan 55,48 gram/kapita/hari. Tingkat konsumsi energi dan protein diketahui masing-masing 78,67?n 89,37% yang termasuk dalam kategori kurang dan sedang. Nilai PPH rumah tangga petani ubi kayu mendapatkan skor 74.7 dengan kategori kurang. Kelompok pangan padi – padian dan kacang – kacangan melebihi nilai anjuran PPH, sedangkan kelompok pangan lainya masih berada dibawah nilai anjuran PPH. Hasil analisis faktor – faktor yang mempengaruhi pola konsumsi pangan rumah tangga secara parsial variabel independent jumlah anggota keluarga dan umur kepala keluarga berpengaruh signifikan terhadap konsumsi energi rumah tangga petani ubi kayu, sedangkan variabel pendapatan rumah tangga, pendidikan ibu rumah tangga, dan luas lahan tidak berpengaruh signifikan terhadap konsumsi energi rumah tangga petani ubi kayu. Hasil uji F menjelaskan bahwa secara bersama – sama variabel independent berpengaruh terhadap konsumsi energi rumah tangga petani ubi kayu.
