ABSTRACT 2008. The Guidelines for Waiter and Waitress in “ Sekar Arum ” Restaurant of Agas International Hotel Solo. English Diloma Program, Faculty of Letters and Fine Arts, Sebelas Maret University Considering how important the guests’ satisfaction, Agas International Hotel Solo tries to give the best for the guests by giving the best service of all the employees. As the employees who have a direct contact with the guests, waiter and waitress have an important part in satisfying the guests. Based on the observation which was done by the writer during the Job Training, this Final Project describes the guidelines, the appearance and the behavior of waiter and waitress in Sekar Arum Restaurant of Agas International Hotel Solo. From the observation, waiter and waitress in Sekar Arum Restaurant of Agas International Hotel Solo can give the best service by greeting the guests, escorting the guests, seating the guests, unfolding the guests napkin, presenting the menu, taking the order, serving the order, waiting and controlling, clearing up dirty dishes, presenting the bill and ushering out the guests. The waiter and waitress may not have mustache and beard, short and neatly combed hair, clean black shoes, clean ears, nose, teeth, eyes and hands, fresh and gleamed face, may not have smelly mouth or body, short and clean fingernail, may not use a glaring jewelry and clean and tidy uniform. The waiter and waitress must have great performance, closing nose and mouth with hand when coughing or sneezing, always ready and having needed equipments, taking the right order from the kitchen, offering how to cook the guests food, checking and refilling food in buffet table, using clean glasses and cutleries, not to let the guests sit in front of dirty table and come to the guests as soon as possible when the guests call. In the end of this Final Project, the writer concludes that the waiter and waitress in Sekar Arum Restaurant of Agas International Hotel Solo need to know what the guidelines of waiter and waitress are, how to appear and how to behave to satisfy the guests. The writer has several suggestions for all of the employees in Agas International Hotel Solo in order to optimize the service and satisfy the guests.
