Abstrak :

The aim of the research was to study the quality of red bean milk kefir with L. acidophilus (2%, 3%, 4%) and S. cerevisiae (1%, 2 %, 3%) inoculum compared to cow milk kefir. Red bean milk was made from red bean, which was mixed with water (1:4).  Fermentation was conducted for 24 hours at room temperature (28oC) with L. acidophilus (2%, 3%, 4%) and S. cerevisiae (1%, 2%, 3%) inoculum. The observed parameters during the research were lactic acid, alcohol, contains of soluble protein, pH, viscosity, and organoleptic test. Except the organoleptic test that was analyzed by hedonic method, all data were analyzed by using ANAVA and continued by using DMRT o n the level 5%.

Based o n the comparison of red bean milk kefir and cow milk kefir, lactic acid concentrations of red bean milk kefir were in the range of lactic acid concentration of cow milk kefir (0,8-1,1%), yet red bean milk kefir with L. acidophilus 3% and S. cerevisiae 1%, L. acidophilus 4% and S. cerevisiae 1%, with L. acidophilus 4% and S. cerevisiae 2% produced lactic acid concentrations higher than lactic acid concentrations of cow milk kefir. Alcohol concentrations of red bean milk kefir (0,278-0,482%) were in the range of alcohol concentration of cow milk kefir (0,2-1,0%). Protein contains of red bean milk kefir were 2,271-4,049%, while protein contains of red bean milk kefir was 3,5%. The value of red bean milk kefir pH (3,72-4,18) lower than pH of cow milk kefir (4,2-4,6). The viscosity of red bean milk kefir which in the range of cow milk kefir viscosity were red bean milk kefir with L. acidophilus 4% and S. cerevisiae 1% (49,317 mPa.s). Based organoleptic test, red bean milk kefir rather dislike by panelists.
