×<p class="MsoNormal" align="justify" xss=removed><span xss=removed>Date’s coffee is a coffee drink product made from waste date seeds from the production of a product which is processed through a series of processes to become a fine powder and packaged using a coffee bag. Apart from being innovated as a beverage product, date’s coffee has also been added to the spice composition of cinnamon to enrich the nutrition and benefits of the product. Date’s seed coffee is useful as an antioxidant because it contains phenolic compounds, which are thought to reduce free radicals. The process of making coffee from date seeds with the addition of cinnamon goes through several stages consisting of washing, fermenting date seeds, drying, roasting, grinding, sieving, mixing and weighing, packaging. Based on the organoleptic tests carried out, it was found that the best samples were the formulations of date seed powder and cinnamon spice, respectively 8 grams: 3 grams. The results of chemical testing showed a pH content of 6.14, water content of 0.61%, antioxidant 57.31%, and flavonoid compounds of 41.10 (mgQE/g). Meanwhile, the results of the economic analysis showed that the cost of goods sold was Rp. 12,043, with a selling price of Rp. 14,452 / packaging and obtained a net profit of Rp. 1,592,538, B/C ratio of 1.238, NPV value of Rp. 57,188.34, and an IRR value of 47%, it can be concluded that the coffee production business made from date seeds is feasible</span></p>
