× BLACK TEA PROCESSING INDUSTRY SANITATION ABSTRACK Tea is a crop that has promising export commodities to foreign countries are predominantly black tea. To improve the quality is carried out the research of sanitation the one is processing industries by interview, observation and direct practice method were done for a month since 1st up 27th February 2010 in PT Plantation Tambi, Tambi Plantation Unit, Tambi Village, District Kejajar, Wonosobo regency, Central Java. The purpose of this research is to determine the system of sanitation and waste processing. Sanitation of requipment, machinery, and processing room requires special attention to prevent contamination of raw materials due to the application of good sanitation in the industry would benefit the production and improve quality of product. The application of good sanitation including sanitation materials, sanitation equipment, machinery, and processing room, sanitation employees and visitors, building and environmental sanitation, sanitation waste treatment system and the implementation of SSOP ( Sanitation Standard Operating Procedure). By doing the steps of sanitation in the industry will be able to give the improvements in quality of product black tea that is produced as product is more durable free from of foreign objects and safe consumtion as well as machinery, equipment and room to will be clean and hygienis.
