Faculty of Agriculture, Sebelas Maret University.Food safety is a very important global issue, with various challenges continuing to arise around the world. As the main provider of fresh and safe food to consumers, food safety issues such as sanitation and hygiene are considered important and add value for consumers. Tanggul Market is the only market in Surakarta that has received the Safe Fresh Food Market programme. There are still food safety risks at Tanggul Market. Many sellers do not fully understand whether the products they sell are truly safe or not, and how to identify and address potential risks. This study aims to (1) determine whether physical, psychological, environmental, social, financial, and time loss factors influence consumer risk perceptions regarding food safety, (2) determine whether risk perception, income, and age factors influence willingness to participate in food safety programmes at Tanggul Market in Surakarta City, (3) to determine the difference in consumer risk perception between markets that are Safe Fresh Food Markets and other markets that are not Safe Fresh Food Markets as a form of food safety supervision.The basic method used in this study was descriptive analysis. The location of the study was determined purposively, namely the Tanggul Market in Surakarta City. The sample was determined using judgement sampling, which consisted of 97 respondents who were consumers at the Tanggul Market. Data was obtained by conducting direct interviews using a questionnaire. The questionnaire used was a closed questionnaire consisting of several statements from the risk dimension about risk perception among consumers with a number of prepared options, using a 5-point Likert scale, where 1 = Strongly Disagree; 2 = Disagree; 3 = Neutral/Undecided; 4 = Agree; and 5 = Strongly Agree. Data analysis used Seemingly Unrelated Regression (SUR) analysis and difference tests. The variables used were physical, psychological, social, environmental, financial, time-loss, income, age, risk perception, and willingness to do factors. The results of the study indicate that the factors influencing risk perception among consumers in the embankment market are physical, psychological, environmental, financial, and time-loss factors. Meanwhile, social factors do not influence consumer risk perception. The factor influencing willingness to do among consumers in the embankment market is risk perception. Meanwhile, income and age do not influence consumer willingness to do. There is no difference in risk perception between consumers in the embankment market and those outside the embankment market.
